Description
In England during the Victorian era, this drink was served to children at Christmas and on birthdays. Instead of port wine, sherry, Bordeaux, or sweet white wines were also used. In the modern non-alcoholic version of children's negus, port wine is replaced with grape juice.
Ingredients
- Sugar - 4.1 oz
- Cinnamon - 4 pieces
- Red port - 1 fl oz
- Oranges - 1 piece
- Ground clove - 10 pieces
- Water - 0 fl oz
- Ground Nutmeg - 0.5 teaspoon
Step by Step guide
Step 1
Juice the orange (or lemon). Use a vegetable peeler to remove the zest and chop it finely.
Step 2
In a large pot, mix water with sugar. Add cinnamon, cloves, zest, and nutmeg. Place over high heat and stir until it comes to a boil. Reduce the heat to the lowest setting and continue stirring, simmering for 15-20 minutes.
Step 3
Pour the port wine and orange juice into the syrup and heat it strongly over medium heat without bringing it to a boil.
Step 4
Remove the cinnamon sticks from the negus and strain. Serve warm in small cups.
