Description
One of the most beloved quick soups for everyday meals. I always make a larger batch of broth, pour it into containers, and freeze it. All vegetables are raw, cooked in the bowl with the boiling broth. My husband eats it with meat from the broth, while I prefer it with seafood. The choice of vegetables is completely arbitrary; I often use broccoli, cauliflower, and asparagus. In Vietnam, where I first tried this soup, all the vegetables were cut very large. Rice noodles do not always need to be boiled in the broth; it depends on the size of the noodles; sometimes, just pouring hot broth over them is enough. For friends, I arrange all the ingredient sets on several trays: carrots, onions, green onions, asparagus, zucchini, steamed eggplant, bell peppers, carrots, sweet potatoes, squid, shrimp, scallops (boiled), herbs, etc. — a space for imagination. Each guest assembles their own pho, while the hostess pours boiling broth over it, adds meat for those who want it, ginger, and garlic. Essentially, the dish is self-sufficient — I invite you to Pho.

- Lean Beef - 2 lbs
- Toasted Cumin Seeds - to taste
- Grated Ginger Root - 1 piece
- Coriander essential oil - to taste
- Garlic - 1 head
- Onion - 1 head
- Scallions - to taste
- Lemon - 1 piece
- Shrimp - 10.6 oz
- White Cabbage - 7.1 oz
- Frozen green bean pods - 3.5 oz
- Frozen green bean pods - 3.5 oz
- Fish Oil - to taste
- Carrot - 7.1 oz
- Soy Sauce - to taste
- Mild Chili Spice - 1 piece
Step by Step guide
Step 1
First, we boil a strong lean beef/chicken broth (it is recommended to simmer for at least 3 hours on low heat; make a large batch, then freeze part of it for future pho).
Step 2
Add the ginger root, star anise (optional), roasted cumin, and coriander seeds to the broth. Instead of salt, add fish sauce.
Step 3
Five minutes before serving the soup, pour the required amount of broth into a separate pot.
Step 4
Add rice noodles and shrimp to the boiling broth.
Step 5
At the very end, add finely shredded cabbage, bring to a boil, and immediately pour into bowls.
Step 6
Pre-frozen green beans and peas are poured with hot water, thinly julienne the carrot, onion, finely chop the green onion, grate a couple of centimeters of ginger root, mince the garlic, and chop the cilantro. Arrange all this in bowls, pour boiling broth with shrimp, noodles, and cabbage over it.
Step 7
Add lemon or lime juice to the broth, and soy sauce can be added to taste.
