Description
Recipe by Edward Smith, head bartender at a popular American restaurant. This infusion made with juniper berries and cranberries is a forest-inspired Siberian gin. It is memorable for its light pine aroma and bright, slightly tart flavor, making it a perfect accompaniment to meat dishes.
Ingredients
- Vodka - 1 qt
- Cranberry - 17.6 oz
- Juniper Berries - 1.8 oz
- Caramel Syrup - 5 fl oz
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Sort the cranberries, removing any damaged berries, and dry them on a paper towel.
Step 3
Thoroughly wash and dry the bottle or jar for the infusion. Add the juniper berries and crush them.
Step 4
Add the cranberries.
Step 5
Pour the simple syrup and vodka into the jar.
Step 6
Seal the jar and shake it several times. You can gently stir the contents with a long spoon.
Step 7
Store the jar in a dark place (for example, in a kitchen cabinet). Leave it at room temperature for 21 days.
Step 8
Every one to two days, take the jar out and shake it.
Step 9
After 21 days, strain the infusion through several layers of cheesecloth or a thin cotton cloth.
Step 10
Pour the infusion into bottles and seal them.
Step 11
Let the infusion rest for another 14 days before tasting. It can be stored for up to 2 years, and natural sediment is normal.
