Ingredients

  • Leek - 1 piece
  • Garlic - 2 cloves
  • Potato - 15.9 oz
  • Chicken Broth - 1 qt
  • Watercress - 7.1 oz
  • Crème fraîche - 4 teaspoons
  • Olive Oil - to taste

Step by Step guide

Step 1

In a pot, heat a small amount of olive oil. Add finely chopped leek and minced garlic. Sauté for 4-5 minutes until the leek begins to soften.

Step 2

Add the broth and diced peeled potato. Bring to a boil and cook for 15-20 minutes until the potato is tender.

Step 3

Add the watercress and cook for 1-2 minutes, remove from heat, season with salt and pepper, and blend the soup until smooth.

Step 4

Pour the soup into small bowls and add a spoonful of crème fraîche to each.
