Watermelon Gazpacho
Ingredients
- Concentrated Cranberry Juice - ½ cup
- Watermelon - 10.6 oz
- Celery stalk - 2 pieces
- Courgette - 1 piece
- Orange Bell Peppers - 1 piece
- Mint Leaves - 0.7 oz
- Spanish onions - 2.1 oz
- Chopped Sage Leaves - 0.7 oz
- Champagne Vinegar - 1½ tablespoons
- Lime Juice - 3 tablespoons
- Habanero Pepper - 1 tablespoon
Step by Step guide
Step 1
In a blender, combine 5 cups of watermelon flesh and cranberry juice. Blend until smooth. Strain through a sieve into a large bowl — you will need 3 cups of juice.
Step 2
In the bowl with the juice, add the peeled and diced cucumber, diced celery stalks (1 cup), diced bell pepper (¾ cup), red onion, finely chopped herbs, lime juice, vinegar, minced jalapeño pepper, and diced remaining watermelon flesh. Mix well, cover with plastic wrap, and refrigerate for 1 hour.
