- Watermelon - 5.3 oz
- Swiss Chard - 0.7 oz
- Frisée lettuce - 0.2 oz
- Olive Oil - 0 fl oz
- Ponzu Soy Sauce - 0 fl oz
- Sugar - 3.5 oz
- Snap Peas - 0.2 oz
- Coriander Seeds - 0.4 oz
Step by Step guide
Step 1
Prepare the spicy caramel. In a pan over very low heat, melt the sugar. Meanwhile, crush the coriander and green pepper in a mortar until you have a coarse crumb. Add the pepper and coriander to the melted sugar and mix.
Step 2
Pour the caramel onto parchment paper in a thin layer and let it cool and harden. Then, crush the mixture in the mortar until it becomes crumb-like.
Step 3
Slice the cold watermelon into pieces and sprinkle the caramel over the slices in a thin layer (1-2 mm). Use a torch to lightly char the surface until a light brown crust forms (5-10 seconds). Arrange the salad leaves and the charred watermelon slices with caramel on a plate.
