  • French Baguette - 1 piece
  • Wheat Flour - 1 tablespoon
  • Butter - 3.5 oz
  • Dark Ale - 7 fl oz
  • Milk - 3 fl oz
  • Mustard Greens - 1 tablespoon
  • Cheshire Cheese - 7.1 oz
  • Whole egg - 2 pieces
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Slice the white baguette into thin pieces, spread butter on both sides of the slices, and place them in an oven preheated to 392°F for three to four minutes.

In the meantime, prepare the sauce in a skillet. Sauté one tablespoon of all-purpose flour in butter, stirring constantly, until it turns a golden caramel color. This is how a thickening agent is made — the French call it "roux."

Step 3

Pour half a pint of dark beer or cider, along with 100 ml of milk, into the thickener and whisk it all together. Add a tablespoon of dry mustard, a pinch of ground black pepper, and grated cheddar cheese (which can be substituted with cheese curds). Let this mixture simmer gently over low heat for about a minute, then remove from the heat. Once the bubbling subsides, whisk in two egg yolks into the sauce.

Remove the crispy slices of baguette from the oven, drizzle with sauce, and enjoy.
