- Milk - 7 fl oz
- Canned White Asparagus - 17.6 oz
- 10% cream - 3 fl oz
- Lemon - ¼ pieces
- Green Butter - 0.7 oz
- Salt - to taste
- White Pepper (whole) - to taste
Step by Step guide
Step 1
Peel the meaty stalks of white asparagus for about two-thirds of their length, starting from the thick end. If the thick ends are very rough, remove them. All the asparagus should ultimately be the same length to cook evenly. So if any stalk is tender but long, cut it down to match the size of the shorter ones, even if it's a tough decision.
Step 2
Gather the asparagus into a bundle and tie it with kitchen twine.
Step 3
In a deep saucepan, bring one and a half liters of salted water mixed with a cup of milk to a boil. Add the asparagus to the water and cook for three minutes over medium heat.
Step 4
Remove the asparagus from the water, transfer it to a baking dish, and pour over the mixture of cream, green cheese, and lemon juice. Season with salt and pepper to taste. Place in an oven preheated to 392°F and bake until the cream and cheese are topped with a golden crust.
