White Bean Soup with Chorizo and Cilantro
Ingredients
- Coriander essential oil - 1 teaspoon
- Green peppercorns - 1 teaspoon
- Semi-Smoked Sausage - 2 pieces
- Dried lima beans - 3.9 oz
- Olive Oil - 1 tablespoon
- Garlic - 3 cloves
- Spanish onions - 1 head
- Celery stalk - 3 stalks
- Leek - 1 piece
- Carrot - 2 pieces
- Chicken fillet - 1 piece
- Chorizo - 5.3 oz
- Mild Chili Spice - 2 pieces
- Cilantro - 1 bunch
- Salt - to taste
- Chicken Broth - 1 qt
Step by Step guide
Step 1
Soak the beans in cold water overnight. Drain and boil in salted water until tender, about 45 minutes. Drain.
Step 2
Toast the coriander seeds and black peppercorns in a well-heated skillet until fragrant. Let cool and grind in a spice grinder.
Step 3
In a large pot, heat the olive oil and sauté the finely chopped bacon until crispy. Add the minced garlic and finely chopped onion, sauté until softened, then add the finely chopped celery, leek, and carrot. Lightly sauté the vegetables.
Step 4
Then add the finely chopped chicken, finely chopped chorizo, beans, and ground spices. Sauté until the chicken is cooked through, then add the deseeded chili peppers, half of the chopped cilantro, and broth. Bring to a boil, reduce the heat, and simmer for 1 hour.
Step 5
Season with salt and serve, garnished with the remaining cilantro.
