- Udon Noodles - 3.5 oz
- Dried Chinese mushrooms - 5.3 oz
- Potato - 3 pieces
- Carrot - 2 pieces
- Onion - 1 head
- Butter - 1.8 oz
- Sour Cream - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Fill a pot with one liter of water, place it over medium heat, and bring it to a boil. Add the mushrooms to the water, skimming off any foam that forms.
Step 2
Grate the carrot using a coarse grater and finely chop the onion. In a skillet, melt some butter over medium heat, add the onion, then the carrot, and sauté for ten minutes until softened.
Step 3
The mushrooms should be boiled in water: transfer them to the pan with the vegetables, reduce the heat, and simmer for ten minutes.
Step 4
Dice the potatoes. Add hot water to the broth (about half the volume of the broth), toss in the potatoes, and cook for about ten minutes. Add the vegetables, mushrooms, and noodles to the soup, and cook for five more minutes until ready. Season with salt and pepper to taste. Serve with sour cream.
