Ingredients
- Ramsons - 14.1 oz
- Water - 17 fl oz
- Sugar - 0.5 oz
- Salt - 0.3 oz
- Clove - 2 pieces
- Green peppercorns - 3 pieces
- 9% Vinegar - 1 fl oz
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Wash and sort the ramps, removing any flower buds if found.
Step 3
In a large pot, bring water to a boil and add the wild garlic. Bring to a boil again and cook for 1 minute.
Step 4
Transfer the wild garlic to cold water.
Step 5
Bring water to a boil with salt, sugar, cloves, and black pepper.
Step 6
Remove from heat and pour in the vinegar.
Step 7
Sterilize the jars and lids over steam for 15–20 minutes.
Step 8
Place the wild garlic into jars and pour hot marinade over it.
Step 9
Seal the jars, turn them upside down, and let them cool completely under a blanket.
Step 10
After a week, the jar with wild garlic can be opened, but it's better to leave it until winter.
