Wild Garlic Soup
Ingredients
- Onion - 1 head
- Celery salt - 5.3 oz
- Carrot - 1 piece
- Ramsons - 5.3 oz
- Potato - 3 pieces
- Celery stalk - 2 pieces
- Frozen green bean pods - 3.5 oz
- Parsley - 0.7 oz
- Water - 1½ l
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Dice the onion, carrot, and celery stalk into small cubes.
Step 3
Peel the potatoes and celery root, then cut them into larger cubes.
Step 4
In a heavy-bottomed pot, heat a little vegetable oil and sauté the onion until it becomes translucent.
Step 5
Add the carrot, celery root, and celery stalk, along with a pinch of salt, and continue to sauté, stirring, for 5 to 7 minutes.
Step 6
Add the potatoes, stir, and cover with water. Bring to a boil and cook over medium heat for 10 minutes.
Step 7
Finely chop the ramson and add it to the soup, cooking for an additional 2 minutes.
Step 8
Add the peas and cook for another 3 minutes.
Step 9
At the very end, season the soup with salt and pepper to taste, and add finely chopped parsley.
Step 10
Let the wild garlic soup sit for about 5 minutes before serving.
