Wild Mushroom Soup with Aromatic Herbs

Ingredients

  • Dried Chinese mushrooms - 0.5 oz
  • Pickled Chanterelles - 0.5 oz
  • Dried Chinese mushrooms - 0.5 oz
  • Olive Oil - 4 tablespoons
  • Garlic - 3 cloves
  • Spanish onions - 1 head
  • Fresh Mushrooms - 21.2 oz
  • Dried Epazote Leaves - 0.7 oz
  • Thyme - 2 sprigs
  • Oregano - 2 sprigs
  • Fresh Rose Hips - 1 sprig
  • Ground ancho chili pepper - 3 pieces
  • Chicken Broth - 2 qt
  • Salt - to taste
  • Lime - 1 piece

Step by Step guide

Step 1

Soak the dried mushrooms in hot water for 20 minutes. Drain and cut into medium pieces.

Step 2

Heat the olive oil in a pot over medium heat, add the sliced onion and sauté for 3 minutes. Add the thinly sliced garlic and cook for another 5 minutes. Then add the chopped fresh mushrooms and cook until soft and slightly browned, about 5 minutes.

Step 3

Add the dried mushrooms, tied herb sprigs, chili, and broth. Bring to a boil, reduce the heat, and simmer for 1 hour.

Step 4

Remove from heat, take out the bundle of herbs, and season with salt to taste. Serve garnished with lime wedges.
