Wine-Marinated Shrimp on Rosemary Skewers
Ingredients
- Dry White Wine - 1 tablespoon
- Meyer Lemon Juice - 1 teaspoon
- Olive Oil - 1 teaspoon
- Salt - 0.1 teaspoons
- Ground Black Pepper - 0.1 teaspoons
- Garlic - 1 clove
- Peeled Cooked Shrimp - 18 pieces
- Fresh Rose Hips - 6 sprigs
- Marinated cherries - 6 pieces
- Vegetable Oil - to taste
- Orange Bell Peppers - 1 piece
Step by Step guide
Step 1
In a bowl, mix the wine, lemon juice, olive oil, salt, pepper, and minced garlic. Add the shrimp and mix well. Transfer everything to a plastic bag, seal tightly, and refrigerate for 30 minutes, occasionally turning. Meanwhile, prepare the pepper by removing the seeds and cutting it into small pieces. Wash and dry the cherry tomatoes.
Step 2
Preheat the grill or barbecue. Grease the grill grate with oil.
Step 3
Remove the leaves from the rosemary sprigs, leaving some leaves at the tip of each sprig. Carefully thread 3 shrimp onto each sprig, alternating with tomatoes and pieces of pepper.
Step 4
Lightly brush the shrimp and vegetables with vegetable oil and place them on the grill. Cook for about 2 minutes on each side until the shrimp are cooked through. Serve with lemon wedges.
