Description
Since this is a winter compote and cherries and sea buckthorn are not in season during winter, we use frozen berries.
Ingredients
- Star anise - 2 pieces
- Water - 4 qt
- Sugar - 12.3 oz
- Lemon - 1 piece
- Sea Buckthorn - 7.1 oz
- Cherry - 35.3 oz
Step by Step guide
Step 1
Place the berries nearby while preparing the syrup. For this, take 1 liter of water, preferably hot, from the kettle. Pour it into a large pot, turn on high heat, and add the star anise and lemon. Add all the sugar (the amount of sugar can be increased or decreased depending on your preference for sweetness). Dissolve all the sugar and let the syrup boil.
Step 2
Next, pour the berries into the boiling syrup and stir. Allow the compote to come to a boil again, after which remove the pot from the heat.
Step 3
After the compote has boiled, let it cool down. To speed up this process, I usually dilute it with cold water to a reasonable taste. If you prefer the compote hot, you can dilute it with hot water.
