Winter Currant Mojito Compote
Ingredients
- Red Currant - 8.8 oz
- Red Currant - 8.8 oz
- Fresh Mint - 4 sprigs
- Sugar - 10.6 oz
- Water - 2½ l
- Lemon - 1 piece
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Sterilize the jars over steam for 15–20 minutes.
Step 3
Wash the lemon (and blanch in boiling water if there's a wax coating). Slice it into rounds, and discard the ends.
Step 4
Place the slices in jars. Rinse the currants thoroughly and add them to the jars along with the stems.
Step 5
Add mint leaves to the jar.
Step 6
Boil the water and fill the jars to the brim. Cover the jars with lids (do not seal) and let them sit for about 1 hour.
Step 7
Drain the water from the cans into a pot.
Step 8
Pour sugar into the jars.
Step 9
Bring the liquid from the jars to a boil, pour it back into the jars while hot, and seal them.
Step 10
Turn the jars upside down, wrap them in a blanket or quilt, and let them sit for 8 hours, or preferably for a full day.
