Ingredients
- Eggplants - 5 pieces
- Sweet Pepper - 5 pieces
- Tomatoes - 5 pieces
- Onion - 5 pieces
- Vegetable Oil - 7 fl oz
- 9% Vinegar - 1 tablespoon
- Water - 3 fl oz
- Salt - 1 tablespoon
- Sugar - 2½ spoons
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Chop all the vegetables coarsely.
Step 3
Place all the vegetables in a large pot.
Step 4
Add vegetable oil.
Step 5
Add vinegar, water, salt, and sugar, and mix well.
Step 6
Bring the vegetables to a boil and simmer covered for 30–35 minutes over low heat.
Step 7
Sterilize the jars and lids over steam for 15–20 minutes.
Step 8
Place the vegetables in sterilized jars and seal with lids.
Step 9
Cover the jars with a blanket until they cool down.
Step 10
Eggplants can be eaten the next day.
