Description
There's no need to elaborate on the special mission of apple juice: it serves as the base for most industrial juices, with just the addition of flavors from other fruits and berries. However, while apple juice is a foundation in itself, it's delightful on its own with its combination of acidity and sweetness, freshness, and subtle aroma. In this recipe, the apple juice is blended with black rowan juice, primarily to give the colorless drink an appealing wine-like hue, but more importantly, to add an interesting taste and a slight tartness that elevates the plain apple, making the drink playful and spirited.
Ingredients
- Clear Apple Juice - 1½ l
- Black chokeberry - 17 fl oz
- Sugar - 4 spoons
Step by Step guide
Step 1
It's better to strain the black chokeberry juice through cheesecloth, while the apple juice can be left as is.
Step 2
Wash and sterilize the jars.
Step 3
Combine the apple juice and black chokeberry juice in a pot.
Step 4
Add sugar to taste (at least 1 tablespoon for every 500 ml of juice).
Step 5
Stirring constantly, bring it to nearly a boil. As soon as the first bubbles appear, remove from heat and pour into jars.
Step 6
Seal the jars tightly with the lids, immediately turn them upside down and place them with the lids facing down. After 24 hours, return the jars to their original position and store the juice in a cool, dark place, such as a cellar or pantry.
