Winter Soup with Garlic and Sage
Ingredients
- Garlic - 2 cloves
- Olive Oil - 2 tablespoons
- Chopped Sage Leaves - 12 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Water - 6 cups
- Farm fresh eggs - 4 pieces
- Scallions - to taste
- Parsley - to taste
- Sourdough Bread - 4 pieces
Step by Step guide
Step 1
Chop or roughly chop the garlic (chopped is better, but takes more time). Heat the oil in a pot over medium heat.
Step 2
Add the garlic and sage, and let it sit on the heat for about 2 minutes.
Step 3
Season with salt and pepper.
Step 4
Add water and bring to a boil over high heat, then reduce the heat and simmer.
Step 5
Cook for 10 to 15 minutes.
Step 6
Add seasonings to taste.
Step 7
Pour the soup into a deep pan and simmer on low heat.
Step 8
Crack the eggs into the pot, stir, and cook for 3 minutes.
Step 9
Before serving, place a piece of toast in each bowl of soup with a poached egg on top.

Garnish with parsley.
