Description
Wonton soup is a Chinese variation of the familiar broth with dumplings. The difference lies in the details: the broth is made from pork, and the filling for the wontons includes shrimp, herbs, pork, and a whole array of seasonings. The result is a very hearty, filling, and aromatic soup. It's easy to prepare by following our video guide.
Ingredients
- Pork Blood - 17.6 oz
- Dried Squid - 1.1 oz
- Scallions - 1.8 oz
- Ginger - 1.1 oz
- Shrimp - 5.3 oz
- Pork Mince - 10.6 oz
- Apple Wine - 1 tablespoon
- Soy Sauce - 2 fl oz
- Chicken Egg - 1 piece
- Sesame Oil - 1 fl oz
- Wonton Dough - 10.6 oz
- Salt - 1 tablespoon
- White Pepper (whole) - to taste
- Sugar - 1 tablespoon
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Place the pork bones in a pot of cold water, bring to a boil, skim off the foam, add dried shrimp, a bunch of green onions, and 20 grams of ginger, sliced. Simmer on low heat for 2–3 hours.
Step 3
Peel the shrimp and chop them into small pieces.
Step 4
Chop the ginger and 10 grams of green onions, including the white parts.
Step 5
Combine the chopped ingredients with the minced meat, add rice wine, a tablespoon of soy sauce, an egg, a teaspoon of salt, sugar, white pepper, and a teaspoon of sesame oil.
Step 6
Place a small amount of filling, about half a teaspoon, onto the wonton dough. Moisten the edges of the dough with water, then fold the edges together, making sure to eliminate any air inside. Pinch the corners together, similar to how you would with dumplings.
Step 7
Boil the wontons in salted boiling water for 3–4 minutes.
Step 8
Strain the broth. In a serving bowl, pour half a teaspoon of sesame oil and a teaspoon of soy sauce. Add a few slices of chopped green onion.
Step 9
Pour in hot broth and add a few cooked wontons.
Step 10
Serve.
