Yellow Beans in Mint Oil

Ingredients

  • Mint Leaves - 10 pieces
  • Chinese green beans - 8.8 oz
  • Olive Oil - 2 tablespoons
  • Coarse Salt - to taste

Step by Step guide

Step 1

Chop about 7 mint leaves and place them in a bowl. Pour olive oil over them and let sit for a few hours.

Step 2

Rinse the beans well, trim the ends, and cut them into small pieces.

Step 3

Cook the beans until tender in boiling water, or preferably steam them for about 10–15 minutes.

Step 4

Transfer the beans to a serving dish and drizzle with mint oil. Season with salt and garnish with the remaining mint leaves.
