Yellow Pea Soup
Ingredients
- Rutabaga - 1 piece
- Yellow Beets - 2 glasses
- Activated Baking Soda - 1 tablespoon
- Carrot - 1 piece
- Leek - 1 piece
- Onion - 1 head
- Salted pork belly - 6.3 oz
- Bacon - 2.5 oz
- Thyme - 5 stalks
- Maple syrup - 2 spoons
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a large pot, add dried yellow split peas, then add baking soda and cover with cold water, ensuring the peas are submerged by about an inch. Bring to a boil over high heat and cook for five minutes, then drain in a colander and rinse with cold water.
Step 2
Pour back into the pot, add the peeled and grated rutabaga and carrot, chopped leek (white part) and onion. Add the whole salted pork belly and finely chopped bacon. Pour in the maple syrup and add salt and pepper.
Step 3
Pour in 12 cups of cold water and bring to a boil. Skim off any foam, reduce the heat to medium, and simmer until the vegetables are tender and the soup has thickened; this will take about two to two and a half hours.
Step 4
Half an hour before it's done, add a tablespoon of fresh thyme leaves. Before serving, remove the pork belly from the pot, and season the soup with salt and pepper to taste.
