Ingredients

  • Yellowtail - 1.2 oz
  • Smoked Eel - 1.2 oz
  • Brioche - 2.8 oz
  • Mayonnaise - 1.2 oz
  • Scallions - to taste
  • Citrus Zest Mix - 0 oz
  • Meyer Lemon Juice - to taste
  • Jelly Powder - 0.7 oz

Step by Step guide

Step 1

Quickly toast the brioche in a dry skillet until it forms a crust.

Step 2

Then heat in the oven at 356°F for 3 minutes.

Step 3

Cut the yellowtail and smoked eel into small cubes.

Step 4

For the dressing, mix mayonnaise with chopped green onions and lemon zest.

Step 5

Add a little lemon juice.

Step 6

Soak the green onions in ice water for 1 hour.

Step 7

Julienne the vegetables.

Step 8

Mix the dressing with the fish.

Step 9

Place on the toasted brioche.
