Description
I ended up with about 700 g of peas in their pods and 5 g of mint.
Ingredients
- Green Peas - 8.8 oz
- Potato - 5.3 oz
- Chicken Broth - 17 fl oz
- Onion - 1 piece
- Garlic - 1 clove
- Fresh Mint - to taste
- Natural Yogurt - to taste
- Salt - to taste
- Ground Black Pepper - to taste
- Butter - 0.7 oz
Step by Step guide
Step 1
Finely chop the garlic, onion, and diced potato, and sauté them in butter until golden brown, about 5–7 minutes, stirring constantly. Transfer to a pot with boiling broth. Reduce the heat, add the mint leaves, season with salt and pepper, and cook until the potato is tender.
Step 2
When the potato is ready, add the rinsed, shelled peas to the pot and cook for 5–7 minutes. It is important not to overcook the peas, or they will lose their wonderful color.
Step 3
Transfer the soup to a blender or blend it with an immersion blender until smooth. Pour into bowls, add soft cheese or yogurt, and garnish with mint.
