Zucchini and Spinach Soup with Cilantro
Ingredients
- Olive Oil - ¼ cup
- Onion - 2 heads
- Courgette - 24.7 oz
- Potato - 12.3 oz
- Fresh basil leaves - 6 oz
- Chicken Broth - 4 cups
- Chopped Green Onions - 1½ cups
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Heat the olive oil in a large pot over medium heat. Add the finely chopped onion and sauté until soft for 8 minutes. Add the sliced zucchini and thinly sliced potato. Stir well.
Step 2
Pour in the broth, bring to a boil, cover, reduce the heat, and simmer for 15 minutes until the potato is tender.
Step 3
Transfer the soup to a blender and add the cilantro and spinach. Blend until smooth (it's better to blend in batches and transfer to the pot) and return to the pot. Season with salt and pepper to taste and thin with more broth if the soup is too thick. Heat before serving.
