Zucchini and Squash Appetizer with Mint
Ingredients
- Olive Oil - 3 tablespoons
- Garlic - 1 clove
- Onion - 1 head
- Butternut Squash - 2 pieces
- Young zucchini - 2 pieces
- Chili Flakes - 0.1 teaspoons
- Meyer Lemon Juice - 1 tablespoon
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Chopped Sage Leaves - 0.7 oz
Step by Step guide
Step 1
Heat half of the olive oil in a skillet over medium heat. Add the thinly sliced onion and minced garlic. Sauté for about 2 minutes until the onion is translucent.
Step 2
Slightly increase the heat and add the remaining oil, chopped zucchini and squash, and red pepper flakes. Cook, stirring, until the vegetables are tender and golden brown, about 5 minutes.
Step 3
Remove from heat and stir in the lemon juice, season with salt and pepper.
Step 4
Transfer to a serving bowl and sprinkle with mint. Serve immediately.
