Ingredients
- Courgette - 4 pieces
- Olive Oil - 2 tablespoons
- Garlic - 1 clove
- Tomatoes - 4 pieces
- Melted Cheese - 3.9 oz
- Fresh basil leaves - 1 tablespoon
- Grated Pecorino Pepato Cheese - 4 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Do not peel the zucchini, slice them into rounds, and remove excess moisture. To do this, place the zucchini in a colander, layering with salt, and place a weight on top for 30 minutes. Pat dry with a towel.
Step 2
Peel the tomatoes and slice them.
Step 3
Heat the oil in a pan, add the zucchini, and add the minced garlic. Sauté the zucchini on both sides until golden brown.
Step 4
Layer the zucchini, slices of mozzarella, and tomatoes in a baking dish. Sprinkle with Parmesan, chopped basil, salt, and pepper.
Step 5
Bake in the oven for 30 minutes at 374°F.
