Zucchini, Arugula, and Parmesan Salad
Ingredients
- Courgette - 24.7 oz
- Salt - 1¼ teaspoons
- Arugula - 8.1 oz
- Olive Oil - 3 tablespoons
- Grated Pecorino Pepato Cheese - 1.1 oz
- Lemon - 1 piece
- Ground Black Pepper - ¼ teaspoon
Step by Step guide
Step 1
Using a mandoline, slice the zucchini as thinly as possible into rounds and transfer to a colander. Add 1 teaspoon of salt and mix well. Let sit for 20 minutes.
Step 2
Rinse the zucchini thoroughly under cold water and dry with a paper towel.
Step 3
Chop the arugula and place it in a large bowl. Sprinkle with half of the Parmesan and the remaining salt. Drizzle with half of the olive oil and mix well.
Step 4
Layer the zucchini rounds on top of the arugula, drizzle with the remaining oil and lemon juice, and sprinkle with the remaining Parmesan and pepper.
