Zucchini, Barley, and Cheese Gratin
Ingredients
- Onion - 1 head
- Vegetable Oil - 1 tablespoon
- Garlic - 2 cloves
- Butter - 2 tablespoons
- Wheat Flour - 2 tablespoons
- Milk - 8 fl oz
- Courgette - 2 pieces
- Pearl barley - 1½ cups
- Gruyère cheese - 2.6 oz
- Grated Pecorino Pepato Cheese - 3.5 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Panko breadcrumbs - 7.1 oz
Step by Step guide
Step 1
Cook the barley in boiling water until tender. Drain.
Step 2
In a skillet, heat the vegetable oil. Add finely chopped onion and sauté until soft, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
Step 3
In a saucepan, melt the butter, add the flour, and stir until the flour turns light golden. Pour in the milk and stir until the sauce is smooth and slightly thickened.
Step 4
Add the onion, grated zucchini, cooked barley, half of the Parmesan, and grated Gruyere to the sauce. Season with salt and pepper and mix well.
Step 5
Preheat the oven to 356°F (350 degrees Fahrenheit).
Step 6
Transfer the mixture to a baking dish and top with breadcrumbs and the remaining Parmesan.
Step 7
Bake in the oven for 30 minutes until golden brown.
