Zucchini Cake with Tomatoes

Ingredients

  • Courgette - 1 piece
  • Chicken Egg - 2 pieces
  • Wheat Flour - 6.3 oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Garlic - 2 cloves
  • Tomatoes - 4 pieces
  • Mayonnaise - to taste
  • Herbs - to taste

Step by Step guide

Step 1

Grate the zucchini (either finely or coarsely), press the garlic through a garlic press or grate it, add 2 eggs, mix thoroughly, add flour to make the batter thicker than for pancakes, and mix.

Step 2

Heat a frying pan with vegetable oil, place 1/3 of the batter in the pan and spread it evenly across the surface (it is preferable for the future layer not to be too thin, otherwise it will fall apart), fry until golden brown, then carefully flip it over using two spatulas.

Step 3

Are 3 layers ready? Great. Now confidently take a large plate, place 1 layer on it, spread mayonnaise, arrange sliced tomatoes, and sprinkle a little with herbs and garlic. Repeat the same with the 2nd layer. Cover with the 3rd layer, spread it with mayonnaise as well, arrange tomatoes, and sprinkle with plenty of herbs.
