Description
A hearty appetizer that brings joy on rainy August evenings and during chilly winter holidays. The key is to use good vegetables, and don’t forget to serve a shot of cold vodka with the finished caviar.
Ingredients
- Courgette - 5 lbs
- Tomatoes - 0 lbs
- Onion - ½ kg
- Carrot - ½ kg
- 9% Vinegar - 2 spoons
- Sugar - 1 tablespoon
- Ground Black Pepper - to taste
- Salt - to taste
- Garlic - 10 cloves
Step by Step guide

Prepare the necessary ingredients.
Step 2
Peel the zucchini and remove the seeds, then cut into large pieces.
Step 3
Chop the onion into large pieces as well.
Step 4
Chop the carrots and tomatoes.
Step 5
Pass all the vegetables through a meat grinder.
Step 6
Place the vegetables over low heat and simmer for 1.5 hours, stirring occasionally.
Step 7
Add crushed garlic to the caviar.
Step 8
Add salt, sugar, and pepper.
Step 9
Add vinegar, mix well, and simmer for another 10 minutes.
Step 10
Transfer the hot caviar into sterilized jars, seal with lids, and let cool under a blanket.

Store in a cool place.
