- Courgette - 4 lbs
- Mayonnaise - 4.2 oz
- Passata Tomato Sauce - 4.9 oz
- Garlic - 3 cloves
- Sugar - 1 tablespoon
- Salt - ½ spoons
- Vegetable Oil - 1 fl oz
- 9% Vinegar - 1 tablespoon
Step by Step guide
Step 1
Prepare all the ingredients. Wash the zucchini.
Step 2
Peel the zucchini and cut it into random pieces.
Step 3
Pass the zucchini through a meat grinder.
Step 4
Add the garlic, pressed through a garlic press, to them.
Step 5
Transfer the zucchini puree to a pot, add the tomato paste and mayonnaise.
Step 6
Pour in the vegetable oil, add salt and sugar. Place on the heat, bring to a boil, and simmer for 40–50 minutes.
Step 7
Five minutes before cooking is done, add vinegar to the caviar.
Step 8
Sterilize the jars and lids over steam for 15–20 minutes.
Step 9
Divide the caviar into jars, seal them tightly, turn them upside down, and leave them covered with a blanket until completely cooled.
Step 10
Store the caviar in a cool, dark place. Serve with your favorite bread.
