Description

The entire dish has a caloric value of 1945 kcal, and 1 half pancake contains 120 kcal. Optionally, you can add a little chopped herbs (dill, parsley, basil) to the pancake batter.   • Courgette - 2 pieces
  • Chicken Egg - 3 pieces
  • Wheat Flour - 1 cup
  • Vegetable Oil - 3 tablespoons
  • Milk - 1 cup
  • Pork Blood - 10.6 oz
  • Onion - 3.5 oz
  • Carrot - 2.5 oz
  • Butter - 2 tablespoons
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

For the pâté, peel and finely chop the onion. Wash, peel, and slice the carrot into half-rings. Place the onion and carrot in a preheated deep skillet for 5 minutes, so the onion starts to release its juice.

Step 2

Meanwhile, rinse and clean the pork liver from membranes and veins. Cut it into small pieces and add it to the skillet. Stir with the vegetables, cover, and simmer for 15 minutes.

Step 3

After the time is up, turn off the heat, transfer the contents of the skillet to a plate, and let it cool.

Step 4

While the liver is cooling, you can prepare the pancakes. For this, peel and grate the zucchini on a fine grater to fill a 250 ml cup.

Step 5

Add the eggs, salt to taste, and mix well until smooth.

Step 6

Sift in the flour, mix, then pour in the vegetable oil, milk, and mix again until you have a homogeneous mixture.

Step 7

Cook the pancakes in a well-heated skillet, just like regular thin pancakes. Before cooking each subsequent pancake, stir the batter slightly. This amount of batter makes 8 pancakes.

Step 8

By this time, the liver should have cooled. Place it in the bowl of a food processor along with the vegetables and the liquid released. Turn the processor on at low speed, gradually increasing the speed as the liver pieces start to turn into a mushy mass.

Step 9

After a while, scrape the stuck mixture from the sides with a spoon, add the softened butter, and turn the processor on again. The finished pâté should not contain any pieces of ingredients and should be completely homogeneous.

Step 10

Spread the cooled pancakes with pâté, roll them up, and cut them diagonally in half.
