Description
A great way to step away from traditional zucchini recipes and see this wonderful vegetable in a new light is with this roll-up recipe. Easy to prepare, this roll-up combines ingredients that often appear in the fridge but never seem to find their place. The strong pairing of cream cheese and fish is well-known, and the zucchini adds a new twist to their relationship. Along with dill, you can also include parsley and a bit of green onion.
Ingredients
- Young zucchini - 21.2 oz
- Chicken Egg - 3 pieces
- Wheat Flour - 4.2 oz
- Baking Powder - 1 tablespoon
- Dill - 1.1 oz
- Sour Cream - 10.6 oz
- Lightly Salted Red Fish - 7.1 oz
- Semi-soft cream cheese - 7.1 oz
- Garlic - 2 cloves
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Wash the zucchini and, without peeling, grate them using a coarse grater.
Step 2
Finely chop the onion and add it to the zucchini.
Step 3
Salt the zucchini and onion and let them sit for 10 minutes to release their juices.
Step 4
Thoroughly squeeze out the juice and transfer the zucchini to a clean bowl.
Step 5
Add flour, baking powder, eggs, salt, and pepper to the zucchini. Mix well.
Step 6
Line a baking sheet with parchment paper and grease it with vegetable oil.
Step 7
Spread the dough onto the parchment paper and place it in an oven preheated to 356°F for 20–25 minutes.
Step 8
For the cream, mix together the cream cheese, sour cream, garlic (pressed), salt, and pepper.
Step 9
Chop the dill very finely.
Step 10
Remove the finished zucchini crust from the parchment paper. Spread cream over the crust, top with fish, and sprinkle with dill.

Roll the cake into a log and wrap it in plastic wrap. Place it in the refrigerator for an hour, after which you can unroll it, slice it, and serve.
