Zucchini Rolls with Creamy Garlic-Cheese Filling
Ingredients
- Young zucchini - 1 piece
- Mayonnaise - 6 tablespoons
- Sour Cream - 4 tablespoons
- Garlic - 1 clove
- Garlic Scapes - 1 bunch
- Hard Cheese - 2.1 oz
- Parsley - 1 stem
- Sun-Dried Tomatoes - to taste
- Ground Black Pepper - to taste
- Chili Flakes - to taste
- Salt - to taste
Step by Step guide
Step 1
Slice the zucchini into pieces about 3–4 mm thick.
Step 2
Place a skillet over high heat, add a pinch of salt and chili flakes.
Step 3
Add the zucchini slices to the hot oil.
Step 4
In a bowl, add the mayonnaise.
Step 5
Add the sour cream.
Step 6
Add the ground pepper.
Step 7
Add the garlic, pressed through a garlic press.

Finely chop the garlic scapes.

Add them to the sauce filling.

Grate the cheese on a fine grater.

Add it to the other ingredients.

Mix thoroughly.

Once the zucchini is nicely browned, flip it over.

When the zucchini is browned on the other side, remove from heat and transfer to paper towels.

Once the zucchini slices cool slightly, spread the filling on them.

Remove the stems from the parsley.
