Description

Best served with tomato sauce. Zucchini can be replaced with regular squash. If the zucchini or squash are not young, peel the skin and remove the seeds.

Ingredients

  • Courgette - 3 pieces
  • Breadcrumbs - 1 cup
  • Salt - a pinch
  • Ground Black Pepper - a pinch
  • Parmesan Cheese - 3.5 oz
  • Herbes de Provence - 1 teaspoon
  • Chocolate eggs - 2 pieces
  • Olive Oil - 1 tablespoon

Step by Step guide

Step 1

Wash the zucchini, pat dry with a paper towel, and trim the ends. Cut into sticks about 1.5 cm thick.

Step 2

In a bowl, beat the eggs. In another bowl, mix the dry ingredients – breadcrumbs, dried herbs, salt, freshly ground black pepper, and grated Parmesan.

Step 3

Preheat the oven to 428°F. Line a baking sheet with parchment paper or grease it with oil.

Step 4

Dip each stick into the egg bowl, shake off the excess, and then coat in the dry mixture on all sides, arranging them in rows on the baking sheet. Drizzle the sticks with olive oil.

Step 5

Place in the hot oven and bake until golden brown and cooked through, about 10 to 15 minutes. Baking time depends on the size of the sticks. Flip the sticks once (around 5 minutes in, when they start to brown).

Step 6

Serve immediately.
