Ingredients
- Courgette - 3 pieces
- Olive Oil - 8 tablespoons
- Scallions - 4 pieces
- Garlic - 4 cloves
- Coarse Salt - to taste
- Herbes de Provence - 2 teaspoons
- Ground Black Pepper - to taste
- Fresh Mint - 8 stems
- Goat cheese - 14.1 oz
- Ground Cumin - 2 teaspoons
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Cut the zucchinis in half lengthwise and carefully scoop out the insides with a teaspoon to create boat shapes. Finely chop the flesh.
Step 3
Heat half of the olive oil in a pan over low heat. Add the minced garlic, finely chopped green onions, and zucchini flesh. Sauté for 10 minutes, stirring, until all the liquid has evaporated. Add the dried herbs, salt, and pepper. Fill the zucchini halves with the mixture and place them in a baking dish. Drizzle with a little water and olive oil. Bake for 40 minutes.
Step 4
Meanwhile, chop the mint leaves and mix them with the goat cheese, cumin, and remaining olive oil. Season with salt and pepper.
Step 5
Remove the zucchinis from the oven, cool for 5 minutes, and fill them with the cheese mixture. Serve warm.
