Zucchini Sushi with Salmon and Dill Sauce
Ingredients
- Smoked haddock fillet - 24.7 oz
- Courgette - 6 pieces
- Dill - 2.5 oz
- Mayonnaise - 10.6 oz
- Smoked Salmon Flavored Croutons - 6 oz
- Champagne Vinegar - 7 teaspoons
- Pickles - 2.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Rub the piece of salmon with salt and pepper. Place it in a steamer and cook for 15 minutes until done. Cool down.
Step 2
Line a baking sheet with paper towels. Cut the zucchini into long thin strips to make 24 pieces. Place them in the steamer in batches and cook for 3 minutes until they become soft and flexible. Transfer to the prepared baking sheet and dry.
Step 3
In a small bowl, mix mayonnaise, three-quarters of a cup of finely chopped dill, and vinegar. Season with salt and pepper to taste.
Step 4
In a large bowl, place the cooled piece of fish and break it into small pieces. Add finely chopped smoked salmon, diced pickles, 3 tablespoons of finely chopped dill, and 0.25 cup of prepared dill sauce.
Step 5
On each piece of zucchini, place 1 tablespoon of the fish mixture and roll it up. Arrange on a plate and serve with the prepared dill sauce.
