Ingredients
- Courgette - 21.2 oz
- Garlic - 2 cloves
- Mild Chili Spice - 1 piece
- Capers - 1 tablespoon
- Meyer Lemon Juice - 1 fl oz
- Anchovy fillet - 4 pieces
- Olive Oil - 7 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a deep skillet, heat the olive oil and sauté the garlic and red pepper.
Step 2
Add the zucchini and cook until they become soft and take on a brown color (about 15 minutes).
Step 3
Pour in the lemon juice, add the capers and anchovies. Simmer everything together for 1 minute.
Step 4
Remove the skillet from the heat.
Step 5
Drizzle a little olive oil, season with salt and pepper.
