Zucchini with mushrooms
Ingredients
- Vegetable Oil - 3 fl oz
- Sour Cream - 17.6 oz
- Butter - 1.1 oz
- Wheat Flour - 1.1 oz
- Young zucchini - 4 lbs
- Porcini Mushrooms - 26.5 oz
- Onion - 5.3 oz
- Dill - 0.4 oz
Step by Step guide
Step 1
In a saucepan, melt the butter, add the flour, stir, then add the sour cream. Bring to a boil, season with salt and pepper, and remove from heat.
Step 2
Sauté the chopped onion in vegetable oil, then add the sliced mushrooms and cook for 7–10 minutes. Next, add the sour cream sauce and simmer for a few more minutes.
Step 3
Cut young zucchinis crosswise into pieces about 3–4 cm long, remove the seeds and some of the flesh to create a cup-like shape. Boil in salted water until partially cooked, then drain in a colander, coat them in flour, and fry in vegetable oil.
Step 4
Fill the sautéed zucchini with mushroom filling and serve, garnished with dill.
