Zucchini with Shrimp
Ingredients
- Ground Black Pepper - to taste
- Salt - to taste
- Mustard Greens - 2 tablespoons
- Tarragon - 10 pieces
- Cream - 10 fl oz
- Peeled Cooked Shrimp - 2 lbs
- Dry White Wine - 9 fl oz
- Shallot - 2 pieces
- Butter - 0.4 oz
- Courgette - 4 pieces
Step by Step guide
Step 1
Peel the zucchini, removing the skin in long strips. Cut each into 3 parts and scoop out some of the flesh to create something like cups. Place them in a steamer for 10 minutes.
Step 2
Grease a baking dish with butter. Melt the remaining butter in a skillet, add finely chopped shallots, and sauté for 5 minutes, stirring. Then add the wine and cook for another 5 minutes. Add the shrimp and three sprigs of tarragon, season with salt and pepper, and cook for a few more minutes until the shrimp turn opaque. Remove them from the skillet and keep warm.
Step 3
In the same skillet where the shrimp were cooked, add the mustard and cream, mix, and let it sit for 10 minutes. Meanwhile, finely chop the remaining tarragon.
Step 4
Place the zucchini in the prepared dish and bake for 10 minutes at 356°F. Then add the shrimp to the cream sauce, remove the tarragon sprigs, and sprinkle with fresh tarragon. Stuff the zucchini with shrimp and drizzle with the sauce.
