Description
All measurements in cups were done using a standard glass.
Ingredients
- Milk - 1 cup
- Sugar - 1½ teaspoons
- Dry yeast - 1½ teaspoons
- Wheat Flour - 21.2 oz
- Matsuni - 1 cup
- Butter - 4.2 oz
- Melted Cheese - 10.6 oz
- Adyghe cheese - 7.1 oz
- Water - 3 fl oz
- Chocolate eggs - 4 pieces
- Salt - 1 teaspoon
Step by Step guide
Step 1
In a glass of warm milk, add yeast, sugar, and 2 tablespoons of flour. Mix well and leave in a warm place for 30 minutes. Make sure the mixture doesn't overflow.
Step 2
Pour the mixture into the sifted flour, add matsuni, 3 tablespoons (60 g) of softened butter, and salt. Knead the dough by hand or in a mixer on low speed for 5 minutes, then on medium speed for 10 minutes. The dough should be soft and not stick to your hands.
Step 3
Shape the dough into a ball, place it in a bowl, cover with a damp towel, and let it rise twice, kneading it each time — this will take about 2 hours.
Step 4
Ideally, the dough should be placed in the refrigerator overnight, and the next day, 2 hours before cooking, take it out to warm up. But if you're short on time, you can prepare it the same day.
Step 5
Next, divide the dough into four parts, roll them out with a rolling pin or flatten them by hand, fold the edges inward twice, pinch the ends to form a boat shape. Let the boats rest for 30 minutes.
Step 6
Grate the cheese, add 100 ml of water, and mix. You should have a liquid cheese mixture.
Step 7
Fill the boats with the cheese mixture and let them rest for another 30 minutes.
Step 8
While the boats are resting, preheat the oven to 428°F.
Step 9
Place two pieces of butter on top of the cheese in each boat.
Step 10
Bake for about 30–40 minutes, but be sure to watch that the boats do not burn.
Step 11
Remove the khachapuri from the oven, create a well in the center, crack an egg into the center of each, add another piece of butter on top of the cheese, and return to the oven for just 2 minutes, until the egg white is slightly set, then serve the hot khachapuri.
