Adjarian Khachapuri with Sulguni Cheese

Ingredients

  • Wheat Flour - 24.7 oz
  • Dry yeast - 2.1 oz
  • Sugar - 0.4 oz
  • Salt - 0.4 oz
  • Vegetable Oil - 2 fl oz
  • Milk - 7 fl oz
  • Suluguni Cheese - 22.9 oz
  • Imeretian cheese - 12.3 oz

Step by Step guide

Step 1

Prepare the flour, 60 grams of yeast, 10 grams of sugar, 10 grams of salt, 75 ml of vegetable oil, and milk. Knead the dough and set it aside for an hour.

Step 2

Grate the two types of cheese and mix the resulting shavings by hand.

Step 3

Roll out the dough into sausages. Shape them into boats, fill them with cheese, and brush with a mixture of egg and vegetable oil.

Step 4

Bake in the oven at 180–428°F for 7–8 minutes.

Step 5

Before serving, place a raw egg yolk and a piece of butter in the center of each boat.

Step 6

To make the dish airy, remove most of the dough inside the boat: this will leave only a thin crispy crust and plenty of filling.
