Ingredients
- Ground Almonds - 12.3 oz
- Coarse matzo - 1.8 oz
- Brown Sugar - 10.6 oz
- Vegetable Oil - 3 spoons
- Chicken Egg - 3 pieces
- Vanilla extract - 1 tablespoon
- Almond - 1 tablespoon
- Orange juice concentrate - 5 fl oz
- Brandy - 5 fl oz
- Salt - to taste
- Powdered Sugar - 7.1 oz
Step by Step guide
Step 1
Place the ground almonds and matzo meal in a bowl, mix them together, and add a pinch of salt. Separate the eggs into whites and yolks.
Step 2
In another bowl, mix together two tablespoons of vegetable oil, brown sugar, egg yolks, almond and vanilla extracts, orange juice, and 75 ml of brandy. Add the almond flour mixture and knead into a thick dough. Whip the egg whites until stiff and gradually fold them into the dough.
Step 3
Grease a baking dish (approximately 30×40 cm) with vegetable oil, pour the batter into it, and place it in an oven preheated to 356°F for twenty-five to thirty minutes.
Step 4
Mix the remaining 75 ml of brandy with the powdered sugar.
Step 5
Remove the sponge cake from the oven and poke it in several places with a wooden skewer. Pour the glaze evenly over the surface and return the sponge cake to the oven for ten minutes, or a little longer, until a crust forms.
Step 6
Cool down, slice, and enjoy.
