- Meyer Lemon Juice - 2 fl oz
- Chopped Sage Leaves - 2 tablespoons

- Water - 1 qt

Soak raw almonds for 12 hours.

After that, blend the nuts with water until smooth.

Next, strain the almond milk from the nut mixture using cheesecloth. Lightly twist the cheesecloth into a bundle and squeeze the cheese without too much force — at this stage, it should not become dry — the consistency should allow mixing with spices. Delicious nut milk will remain in the bowl.
Step 4
Remove the cheese from the cheesecloth, add lemon juice, olive oil, herbs, and pepper, and mix well.
Step 5
Place the mixture back in the cheesecloth, this time squeeze with more force. You will get a tasty nut sauce with spices. The cheese should acquire the consistency of processed cheese. Hang it in the cheesecloth on a string for 8 hours for fermentation. After that, the cheese can be sliced and garnished with fresh herbs.
