Description
You can add any filling to the pistachio ball. In my case, it's cranberries.
Ingredients
- Almond - 8.8 oz
- Pistachios - 4 tablespoons
- Egg white - 2 pieces
- Powdered Sugar - 3.5 oz
- Cognac - 1 tablespoon
- Vanilla salt - to taste
- White Chocolate - 3.5 oz
- Liquid dark chocolate - 3.5 oz
Step by Step guide
Step 1
Mix almond flour, powdered sugar, egg whites, cognac, and vanilla sugar to form a soft, pliable dough, like modeling clay.
Step 2
Chop the pistachios. Take a small portion of the almond mixture and add the chopped pistachios. It's important to knead well.
Step 3
Form a sausage from the almond mixture and cut it into pieces. Roll each piece into a ball. From the pistachio mixture, make smaller balls. There should be an equal number of balls from both the almond and pistachio mixtures. Place the balls in the refrigerator for 1 hour.
Step 4
Flatten the almond ball, place the pistachio filling in the center, and roll it back into a ball.
Step 5
Melt the chocolate in a water bath, skewer each ball with a toothpick and dip it into the chocolate until fully coated.
Step 6
Place the chocolate-covered ball on a plate or parchment paper to set. While the chocolate is still soft, sprinkle with ground pistachios.
Step 7
Refrigerate the candies until the chocolate is completely set.
