Almond flour cookies with a filling in the center
Ingredients
- Butter - 8.5 oz
- Cream Cheese - 4.2 oz
- Sugar - 1 cup
- Egg Yolk - 1 piece
- Vanilla extract - 1 tablespoon
- Almond Flour - 1 cup
- Rice Flour - ½ cup
- Potato starch - ¾ cup
- Coconut flour - ¼ cup
- Jam - to taste
- Xanthan Gum - ½ tablespoon
Step by Step guide
Step 1
Beat the butter, cream cheese, and sugar together until light and fluffy. Add the egg yolk and vanilla. Mix well. Add the xanthan gum, both types of flour, and the starch, mixing thoroughly. If you plan to color the dough, now is the time.
Step 2
Place your mixture in the refrigerator for about 1 hour. BUT DO NOT FREEZE! Otherwise, it will affect the shape of the cookies.
Step 3
Roll the dough into balls, about 2.5 cm in diameter. Shape them into meatballs and place on an ungreased baking sheet.
Step 4
Make an indentation in the center of each cookie using your fingers or a kitchen utensil like a spoon. I use my fingers; they are easier to clean.
Step 5
Fill the aforementioned indentations with jelly or jam. Do not put too much filling, as this cookie will not rise, it may spread. So try to keep the jam within the indentation.
Step 6
Place the filled cookies in a preheated oven at 175°C (350°F) and bake for 18-20 minutes or until they are golden brown on the bottom. Let them rest on the baking sheet for 5-10 minutes or until they settle. Then transfer to a wire rack to cool.
