Ingredients
- Chopped almonds - 3.5 oz
- Wheat Flour - 3.5 oz
- Rum - 1 fl oz
- Butter - 3.5 oz
- Sugar - 2.1 oz
- Egg white - 1 piece
- Semi-soft cream cheese - 6 oz
- Vanilla salt - 1.4 oz
- Milk - 1 fl oz
- Citrus Zest Mix - 1 teaspoon
- Kiwi - 4 pieces
Step by Step guide
Step 1
Soak the almonds in boiling water for 5 minutes, remove the skin, and dry them in a hot skillet, stirring.
Step 2
For the dough, grind the almonds into fine crumbs, mix with flour and sugar. Add cold butter in pieces. Mix until it resembles fine crumbs. Add the egg, rum, and quickly knead the dough. Then wrap the dough in plastic wrap and refrigerate for 30 minutes.
Step 3
In a low greased pan, roll out the dough into an even layer with small edges. Make several fork holes. Before baking, cover the dough with parchment paper and add beans to prevent it from rising during baking. Bake the base for 15 minutes at 356°F, then remove the paper, take out the beans, and bake for another 10-15 minutes until the base is done.
Step 4
Beat the cream cheese, vanilla sugar, milk, and zest with a mixer until airy (2-3 minutes). Spread the cream into the prepared cooled base.
Step 5
Peel the kiwi, slice it, and arrange it in thin layers on top of the cheese filling.
