Almond Lemon Cookies
Ingredients
- Chopped almonds - 5.6 oz
- Lemon - ½ piece
- Flaxseeds - 1 tablespoon
- Maple syrup - 2 tablespoons
- Olive Oil - 2 tablespoons
- Salt - a pinch
Step by Step guide
Step 1
Rinse the almonds, let them dry a bit, and grind them in a food processor or powerful blender into a fine crumb.
Step 2
Grate the zest of half a lemon, add it to the almonds, and drizzle with lemon juice.
Step 3
Add the remaining ingredients and mix well.
Step 4
Form small cookies and place them on a baking sheet lined with parchment paper.
Step 5
Bake in a preheated oven until golden brown (be careful, in my gas oven this took no more than 4–5 minutes).
