- Pears - 4 pieces
- Sugar - 21.2 oz
- Butter - 8.8 oz
- Farm fresh eggs - 4 pieces
- Powdered Sugar - 7.1 oz
- Grated Ginger Root - 8.8 oz
- Grated Chocolate - 7.8 oz
- White Beans - 1 piece
Step by Step guide
Step 1
First, wash the pears. Pour 400 g of sugar into a saucepan and place it over low heat. Add ginger, the vanilla bean, 600 ml of water, and ginger. Bring to a boil and simmer. Add the pears to the syrup and cook them for about 10 minutes, until soft. Then remove and let cool.
Step 2
Line a baking dish (25 cm) with parchment paper. In another saucepan, combine the remaining sugar and 100 ml of water. Place over heat. Cook until the sugar turns into a dark thick caramel. Add finely chopped butter (20 g). Stir until the butter is completely melted and pour it into the bottom of the dish. Slice the pears and arrange them in the caramel.
Step 3
Preheat the oven to 356°F. Mix the remaining butter with powdered sugar and beat at high speed until a uniform thick mass forms. Gradually add the eggs one at a time, mixing the batter thoroughly. Add the almonds and mix well again. Pour the batter over the pears and bake for 35 minutes. Once the cake has cooled, invert it.
